Scrambled Egg with Avocado & Smoked Salmon

Ingredients:

2 eggs

1 avocado

25g smoked salmon

Handful each of spinach and rocket

¼ tsp Smoked paprika

Salt & pepper

Lemon or lime juice

Method:

Mix eggs with salt, pepper and smoked paprika and scramble, either in the microwave or in a pan on the cooker, to desired consistency.

Mash up avocado with squeeze of lemon or lime juice.

Place scrambled eggs, mashed avocado and smoked salmon on a bed of rocket and spinach. Serve.
